Lemon Cookies

This recipe screams SPRING to me. We have a lemon tree and these cookies are always a hit here. They're cheap, easy, & irresistible...what are you waiting for? See for yourself.



Lemon Cookies

3/4 cup butter
1/2 cup powdered sugar
1 Tablespoon lemon peel, grated
1 cup flour
1/2 cup cornstarch
1/4 cup colored nonpareils (for decoration)

Lemon Icing:

1 cup powdered sugar
2 Tablespoons lemon juice
1/2 teaspoon lemon peel, grated

In a small bowl, cream butter & powdered sugar until light & fluffy. Beat in lemon peel. Combine flour and cornstarch and gradually add to the creamed mixture. Mix well. Cover and chill for 1 hour or until easy to handle.

Shape into a 2 inch diameter log and roll completely in nonpareils. Wrap in plastic wrap and chill for 2 hours (or up to 24 hrs.)

Unwrap, and cut into 1/4 inch slices. Place on ungreased baking sheet and bake at 375 degrees for about 10 minutes, or just until set.
Cool for 1 minute before removing from cookie sheet.

While cookies are cooling, prepare icing by combining the ingredients. Spread over cookies.

Makes about 25 to 30 cookies.
