French Toast in Bed



Whenever my husband has a day off and sleeps in, which is rare, I love to serve breakfast in bed to him. This simple breakfast just might be his favorite. I enjoy setting up a nice tray, complete with place mat & a garden flower.
If you have fresh berries, slice them up, they're fantastic on French Toast.
Here's what I do...


Serves 1 hungry man or 3 children

Half a baguette, sliced into 1 inch thick pieces
2 large eggs
1 Tablespoon sugar
1 Tablespoon vanilla extract
2 Tablespoons cream or milk
2 Tablespoons butter
Syrup & additional butter, if desired

In a large shallow plate, stir together eggs, sugar, extract & milk.





Combine well and add bread pieces.


Allow to soak for 2 or three minutes.



Then turn to coat other side and allow to soak up most of the remaining "batter".



Meanwhile melt 2 Tablespoons of butter in a large skillet, when it's hot, add the bread slices, being careful not to overcrowd the skillet.







Reduce heat to medium and cook bread for about 2 to 3 minutes. Then turn and cook another 2 minutes or until the bread is golden.




Place slices on plate and drizzle with syrup and additional butter, if desired.
