I'm happy to report the garden is slamming full of fresh, ripe, delicious produce.
It's so easy to toss together summertime meals if you have the basics right in your backyard. A large variety of pepper plants will keep you stocked all season, and growing several kinds of tomatoes is also wise, as their flavors can be very different and distinct.
I love a colorful plate of food~ Here's what we picked today for dinner:
We tossed some fresh flour tortillas in a pan & here's what we turned everything into:
And um...this crazy "wannabehandmodel" snuck into the photo from nowhere to get one!!
Fresh Picked Fantastic Fajitas
2 Tablespoons butter
1 large onion, cut into wedges
1 cup peppers, cut into strips, I like a mixed bunch of colors, any are fine
1 large tomato, cut into wedges
1/4 teaspoon onion salt
1/2 teaspoon garlic salt
1/2 teaspoon garlic pepper
1/2 teaspoon seasoned salt (optional)
1 lb.* sirloin, cut into strips (can use 1/2 lb. sirloin, & more peppers/onions or omit sirloin completely, the flavor is still terrific!)
warm tortillas
halved cherry tomatoes and chilies, for garnish--if desired
cilantro, if desired
Heat butter in large, deep skillet. When melted, add onion & peppers and cook for 7 minutes over medium low heat, stirring often. Add tomatoes, and seasonings and stir to mix. Add sirloin, if desired and cook for 5 minutes longer.
Serve on warm tortillas.
Garnish with cherry tomatoes, chilies and/or cilantro, if desired.
Serves 4 easily.
