I love fried pork chops! This simple method is a family favorite and never fails to turn out perfectly. I like to make my own bread crumbs, but the store bought kind will work fine in a pinch.
1 egg, beaten with a Tablespoon of water
1 pound boneless pork chops
1 cup plain bread crumbs seasoned with 1/2 teaspoon each: garlic pepper and salt
2 Tablespoons oil
Three boneless chops, just under an inch thick, will weigh about one pound.
Dip chop into beaten egg wash, then into crumbs, pressing to coat well.
Repeat with remaining chops.
Place on a plate and cover. Refrigerate for at least 20 minutes, up to several hours.
When ready to cook--preheat oven to 350 degrees, & heat 2 Tablespoons oil in a large skillet. When hot, add chops to skillet and brown quickly.
Carefully turn and cook until other side is browned. They will not be fully cooked, not even close.
Transfer to a glass baking dish.
Bake, uncovered for 25-30 minutes.
Serve with mashed potatoes, mushroom gravy and a buttery vegetable.
