Clams Ala Rob

My family adores steamed clams, but they eat a TON of them and it gets quite expensive to order them at our favorite seafood restaurant--so I started making them at home. It's so easy to do and they're absolutely delicious.
You can get clams pretty cheap at COSTCO and this recipe may become one of your family's favorites!



50-60 small clams in shell, scrubbed
2 tablespoons extra virgin olive oil
8 cloves garlic, minced
2 cups white wine
3 tablespoons butter
1/2 cup chopped fresh parsley
French bread loaf, optional, but perfect to soak up the juices!

Wash clams to remove any dirt or sand. In a large pot, heat oil over medium heat. Add garlic; saute for 1 minute, or until tender. Pour in the white wine. Boil until wine has reduced to half its original volume.Add clams, cover, and steam till clams start to open. Add butter, cover, and cook till most or all of the clams open. Discard any that do not open. Transfer clams and juice to 2 large bowls. Sprinkle with parsley. Serve with warm French bread.
