This morning I found that more than half of a raspberry coffee cake from yesterday had gotten quite stale overnight. I hate to waste anything, so I thought I'd experiment with it and have a little fun.
I came up with something really good--Coffee Cake French Toast!
Leftover coffee cake (you'll want it slightly stale)
1 egg, lightly beaten with 2 T. milk
2 Tablespoons butter
Powdered sugar
Cut coffee cake into 1 inch thick slices. Melt butter in large skillet.
Dip slices into egg mixture and turn.
Toss into skillet and allow to brown for 1 to 2 minutes on each side.
Remove from skillet, sprinkle with powdered sugar.
