For 1: Omelet in a Mug--To Go

If you ever need a quickie breakfast, to go--here's a recipe that fits the bill.
It whips up in a coffee mug, cooks for about 2 or 3 minutes, and tastes great. No clean up either! Check it out.



2 eggs, beaten
2 tablespoons shredded Cheddar cheese
2 tablespoons diced fully cooked ham
1 tablespoon diced green bell pepper
salt and pepper to taste

In a microwave-safe mug coated with nonstick cooking spray, combine all ingredients. Microwave, uncovered, on high for 1 minute; stir. Cook 1 to 1-1/2 minutes longer or until eggs are completely set.

*If time is super stretched for you in the mornings, try chopping and shredding the ingredients at night--popping them into a small Ziploc baggie, and all you need to do is dump them in the mug, crack two eggs, and zap them. That's what I call "fast food"!
