Migas--It's What's For Breakfast

Migas are wonderful. If you've never made them, you really should.
Basically they're a breakfast type omelet, with some Mexcian flair. There are chopped corn tortillas within it. You can really go crazy with this basic recipe. Feel free to add peppers, fried potatoes, chilies, the possibilities are endless. Check it out..



6 eggs
1/4 cup milk
3 (6 inch) corn tortillas, coarsely chopped
2 tablespoon butter
1 tablespoon chopped green onion
1/2 cup cooked breakfast meat (sausage, ham, bacon etc.)
1/3 cup shredded cheese
salt and pepper to taste

In a bowl, beat eggs and milk together. Soak tortilla pieces in egg mixture for 5 to 10 minutes. Meanwhile, heat butter in a skillet over medium heat. Saute green onion over medium-low heat until onion is soft, about 5 minutes. Add cooked meat to skillet. Pour egg mixture into skillet and cook over medium/low heat until eggs are set. Sprinkle with cheese.
