Shrimp Fajitas

The weather says it's time to bust out the grill and what could be better than shrimp on your Barbie??
These fajitas taste truly special and they are, they're flavored with a sweet honey sauce and served in fresh, warm tortillas with pineapple and all the fixings.
There's no kitchen mess, no oven heating up the house--what's not to love?
See for yourself, they're super simple to make.




1 pound uncooked medium shrimp, peeled and deveined
1 medium green pepper, cut into 1-inch pieces
1 medium sweet red pepper, cut into 1-inch pieces
1 medium red onion, cut into 1-inch pieces
1/2 cup honey barbecue sauce, divided use
8 flour tortillas, warmed
1 cup shredded lettuce
1 medium tomato, diced
1 cup shredded cheddar cheese
4 oz. diced pineapple, drained


In a large Ziploc type bag, combine 1/4 cup barbecue sauce and shrimp. Toss to coat and chill for at least 30 minutes--but no longer than 12 hours.
On soaked wooden skewers thread shrimp, peppers and onion, separately.

Grill onion/pepper skewers, covered, over medium heat or broil 4 in. from the heat for about 15 minutes turning and basting with remaining sauce every minutes or so.

Grill shrimp skewers for 2 minutes on each side or until shrimp turn pink and vegetables are tender, basting frequently with barbecue sauce.
Be careful not to overcook the shrimp. Overcooked shrimp is tough and rubbery. These will be fully cooked in less than 5 minutes!

Remove shrimp and vegetables from skewers. Place a mixture of shrimp and vegetables on one side of each tortilla. Top with lettuce, tomato, cheese & pineapple. Fold and eat!
