Give Me 5 Meals --FAST!! Second Edition


Summer is here, YAY~!
It's time to get out and enjoy your life. Why spend hours in the kitchen when you could be out tossing the Frisbee with your dog or building sand castles with the kids. You'll never wish you'd slaved more and laughed less...

Here's 5 recipes I rely on to get us out of the house and in on the fun.
I like to use home-grown vegetables whenever possible and the carnitas are a fabulous way to do so.

Here is a fruity pork that is wonderful served in tortillas, on nachos, on sandwiches, or just about any other way you choose to enjoy it.

This sandwich takes just 15 minutes or less from start to finish and you'll be left satisfied and smiling. They incorporate my favorite Italian ingredients and I've been told they are equally delicious without the pepperoni, if you're not a fan. Pretty much everything is easy to keep on hand and these gems are a terrific party munchie too. Just slice into inch-wide segments and serve.

I've had people say, "Fish Tacos....EWWWWW!" and then taste these and love them. Any whitefish is fine to use in this super simple recipe. In fact, it's so easy to prepare that our kids can do it themselves.

SHOPPING LIST*

3 pounds pork roast
6 oz. bottle orange juice
6 oz. can apple juice
bell pepper
fresh pineapple slices (optional)
small, airline-size bottle BRANDY (optional)
tortillas
Italian dressing
Parmesan cheese
2 (14 oz.each) cans artichoke hearts
2 or 3 tomatoes
5 oz. pepperoni (optional)
small can ripe olives
hoagie buns
2 cups Mozzarella cheese
1 pound chicken breasts
2 or 3 onions
1 pound bacon
bread crumbs
linguine
small jar capers (optional)
3 to 4 pounds lean ground beef
hamburger rolls
1-2 pounds whitefish
2 lemons or limes
1 salad bag Shredded Cabbage
small container sour cream
