Crab Stuffed Lobster Tails

This meal is super easy to make and really fool-proof. You can get fresh lobster at COSTCO for fantastic prices. Those 3 large tails pictured were just over $30.00, easily a fraction of what you'd pay for lobster at a nice restaurant. Serve this meal with a tangy, tossed salad and a nice bottle of wine. You never need to reveal how simple it was to make...



1-1/2 cups butter (3 sticks)
1 cup crab meat, chopped
1 sleeve of Ritz crackers, crushed to crumbs
3 lbs. fresh lobster tails

Heat broiler with rack about 6 inches from heat.
Melt butter, add crab and crackers, mix together.



Using sharp scissors, split the lobster tails lengthwise and spread slightly apart.



Place on a foil lined cookie sheet and broil for about 3 to 4 minutes, precooking them a bit.



Remove from oven and stuff lobsters with crab/Ritz mixture, mounding it a little.



Return to broiler and watch carefully, cooking them just until the stuffing is golden and bubbly. WATCH AT ALL TIMES--it will brown quickly.
Remove from oven and let stand for 2 or 3 minutes.
