Spinach Salad

Spinach is so good for you, though many people think they don't like it. Often times they've never tasted it fresh and uncooked, like in a spinach salad. This salad delivers lots of flavor with hard boiled eggs, bacon and fresh mushrooms.
The dressing is a snap to make too. This recipe serves 2.

2 tablespoons red wine vinegar or cider vinegar

1/4 teaspoon salt
1/4 teaspoon ground mustard
1/4 teaspoon paprika
2 cups torn fresh spinach
1 hard-cooked egg, sliced
3 bacon strips, cooked and crumbled
4 oz. sliced fresh mushrooms

In a jar with a tight-fitting lid, combine the first 10 ingredients; shake well. Divide spinach between two serving bowls or plates; top with egg, bacon & mushroom slices. Drizzle with dressing. Serve immediately. Serves 2.
