We have a pretty sweet sand castle building kit and never cease to amaze the passerby with our creations.
I like to pack a lunch that's easy, that everyone likes and has little/no cleanup. This salad fits the bill. I made everything for it tonight, and it's all packed up to toss in the cooler tomorrow with some fresh fruit, iced tea, lemonade & sunscreen.

1 lb. boneless chicken breast halves, cooked and diced
1 head lettuce, torn into small pieces
4 green onions, sliced
2 oz. water chestnuts, sliced thin
2 tablespoons sesame seeds, toasted
6 ounces Chinese noodles, crisped
6 tablespoons seasoned rice vinegar
1/4 cup white sugar
1 teaspoon salt
1/2 cup peanut oil
In a large salad bowl combine the chicken, lettuce, green onion, water chestnuts & seeds. Mix all together. Set aside. Reserve crisped noodles separately.
To Make Dressing: (Dressing can be made up to 48 hrs. in advance.)
Put vinegar in a small bowl. Dissolve sugar and salt in vinegar before adding oil. Shake well.
Add dressing to salad when ready to serve, and toss to coat. Serve on reserved, crisped noodles. Serves 4.
