Special Breakfast: Strawberry Omelet



















Are you tired of the same old breakfast? Well this luscious omelet is sure to shake things up for you. It's light and fluffy and exploding with berries. Yes, I said berries...really, look...

6 eggs, separated
1/2 teaspoon salt
1/4 cup sugar
2 Tablespoons flour
Pinch of sugar
2 teaspoons grated lemon peel
1 teaspoon vanilla extract
2 Tablespoons butter
1 pint of berries, sweetened
Whipped Cream or Cool Whip

In a mixing bowl beat egg whites with salt until stiff peaks form. Set aside.
In another bowl, beat the egg yolks, sugar, flour, sugar, lemon peel, and vanilla until smooth.
Fold in egg whites. In a large oven proof skillet, melt butter over medium heat. Add egg mixture Cook without stirring for about 6 minutes, or until the bottom is golden.
Remove from heat. Broil 4 inches from the heat for 1 minute, or until the top is golden--watch carefully! Fold omelet in half and top with berries and a dollop of whipped cream.
