Roasted Garlic Spread With Baked Pita Chips

This simple recipe is a fantastic alternative to the usual high fat chips and dips.



5 large garlic bulbs
10 teaspoons olive oil (about 2 teaspoon per bulb)
Salt and Pepper, to taste
5 to 10 pita rounds, cut into triangles

Heat oven or toaster oven to 350 degrees. Carefully peel paperlike skin off garlic bulbs, leaving enough skin to hold the cloves together.

Cut about 1/4 inch from the top of each bulb to expose cloves a little bit. Place cut bulbs, cut-side up in small baking dish lined with foil.

Drizzle each bulb with 2 teaspoons of oil. Sprinkle well with salt and pepper. Cover dish with foil tightly. Bake for 45 minutes.

Place pita pieces on an ungreased cookie sheet. Add to oven.

Bake for 5 minutes. Remove bulbs and pitas.

Cool everything for 5 minutes.

Serve garlic by gently squeezing soft, roasted garlic out of cloves. Spread on pita triangles.
