Deli Chicken Sandwiches

Monday’s always turn out to be hectic around here. This is something my family loves that I can serve when I am feeling rushed. Add some soup or some French fries and call it a meal.

  • 1 (2 lb.) fully cooked, roasted chicken, meat pulled from

  • the bones (skin & bones discarded)

  • 1 medium red or white onion, cut into ¼ inch slices

  • 1 T. olive oil

  • 1/3 cup white wine vinegar

  • ½ cup tomato sauce

  • 2 Tablespoons molasses

  • ½ teaspoon salt

  • ¼ teaspoon garlic powder

  • ¼ teaspoon black pepper

  • 4 Kaiser rolls
  • or Panini bread
  • Pickles, optional


In a large skillet, cook onion in hot oil over medium heat about 5 minutes. Stir often to separate onion into rings. Add vinegar and cook and stir for 1 more minute.Stir in tomato sauce, molasses, 2 T. water, salt, garlic powder, and pepper. Bring to a boil. Add chicken meat. Stir to coat, heating through. Serve on rolls.
