We grow a lot of peppers here, they flourish with very little care and are so versatile.
One of my all-time favorite things to make with the jalapenos are these tasty little snacks. With only three ingredients they go together in a snap and are ideal to munch on while watching the game with a cold brew.
They're not too spicy for most, I promise, the oven baking definitely mellows the heat and the creamy cheese softens the blow as well. See for yourself, they're irresistible.
1 dozen jalapenos, cut in half, seeds and membranes removed
8 oz. Neufchatel cheese, softened (or cream cheese)
4 oz. bacon, fried crisp and crumbled
Preheat oven to 350 degrees.
Place halved jalapenos on flat baking sheet.
In a bowl, combine cheese and bacon, stir to mix well.
Fill each jalapeno half with a mound of the cheese/bacon mixture.
Repeat with the rest of the peppers.
Bake for about 20 minutes or until cheese is hot and bubbly. Add 5 minutes for browning of cheese if desired.
