Indian Summer...



It was a busy week for us with our annual elementary school carnival and a variety of other activities--proving that summer is almost here!

However, I'm never too busy for Indian food. After a hectic week of quickie dinners, it was wonderful to spend an evening catching up and enjoying a leisurely meal with some of my favorite people.
With it's many spectacular flavors and sauces, Indian food is meant to be savored slowly--and that's precisely what we did

Here's what was on the menu:

Chicken Tikka Masala - chunks of marinated chicken breast simmered in a rich tomato/cream sauce

Lamb Vindaloo - spicy lamb with onion & potato

Rice

Aloo Gobi - my favorite way to eat caulifower & potatoes

Saag Paneer - spinach and cheese simmered in a cream sauce

Naan - Indian style flatbread available at Trader Joe's in the frozen food section (it's amazing)

Sliced Cucumbers - lots of those
