Stuffed Pork Chops

Boneless pork chops are not only low in fat, but they're quite versatile as well. One of my husbands favorite ways to eat them is stuffed and it's very simple to do.

I buy chops that are at least an inch thick, then turning them on their side--cut deeply but not completely through the pork, forming a wide, deep pocket.

You can stuff them with just about anything. Here's something super easy my family never fails to enjoy:

1 small onion, diced
equal amount of celery, diced
2 Tablespoons butter
1 box stuffing mix
1/3 cup green apple, cored and diced into small pieces
Boneless pork chops, with pocket cut
Salt & seasoned pepper
1 Tablespoon oil

Saute onion and celery in butter until soft.

Meanwhile, prepare stuffing. Add onion/celery mixture & apple to stuffing, stir to mix & set aside.

Sprinkle chops with salt and seasoned pepper and fry in oil until browned on both sides, about 6 minutes total. (they will still be raw inside)

Carefully stuff chops with stuffing, about 1/3 cup each--and place into 400 degree oven for 25 minutes.

I like to serve this meal with sauteed fresh spinach and mushrooms.
