Breakfast In Bed



I love to serve a delicious tray of breakfast to my husband when he's got a morning off. This is one of his favorites, and it's so easy.

2 Tablespoons butter
3 large mushrooms, sliced very thin
2 Tablespoons onion, finely chopped
2 Tablespoons green bell pepper, finely chopped
1/3 cup chopped ham, optional
3 eggs, lightly beaten with 1 Tablespoon milk
1/8 cup shredded cheddar cheese -- Swiss is good also
2 Tablespoons tomato, chopped
Salt & pepper to taste
Toast, if desired
Orange Juice, if desired

In a large nonstick skillet, melt butter and saute mushrooms, onion and bell pepper until soft. Add ham and cook about 3 minutes, until warm. Transfer to small bowl.
In same skillet, scramble eggs until soft set.
Cover top of eggs with ham/vegetable mixture.
Sprinkle with cheese and cover skillet for about 1 minute to melt cheese.
Transfer to a plate and sprinkle with tomatoes.
Serve with toast and orange juice.
