Spicy Little Potato Samosas





These little appetizers are delicious! They begin with puff pastry squares, which are bundled around a spicy, mashed potato mixture--and then fried.
I love to serve them with my cool, creamy, mint-cucumber sauce to temper the "heat".

In all honesty, they were quite time-consuming to make and there really wasn't a noticeable difference in my homemade ones and the freshly premade ones from my Indian market.
I fried them in small batches, drained and cooled them completely, then refrigerated them until the party. I heated them on large baking sheets at serving time. Easy, and no greasy frying at the last minute.

Next time, however, I'd probably use the store bought variety, for efficiency sake.
Either way they were a major success and we managed to devour 200 of them.
Not joking...!
