Our Garden Fresh Salsa



All summer while our garden is slamming out the tomatoes and peppers, we love making fresh salsa. There's just nothing quite like it!
The colors are so appetizing, and the flavor is unbeatable. If you like your salsa a little spicier, simply add more peppers, or some Pico De Gallo seasoning~! Ole.
You'll never go back to store-bought salsa again.



2 cups fresh garden tomatoes (about 2 lbs.)
1 cup yellow cherry tomatoes, quartered
1/2 small onion, finely chopped
3 cloves garlic, chopped
2 Tablespoons fresh lime juice
1/4 cup cilantro, chopped
1 teaspoon jalapeno, seeded,chopped
1/2 teaspoon seasoned salt
Dash black pepper
Two or three dashes balsamic, or red wine vinegar--either is delicious

Core tomatoes. Chop. Drain in colander over bowl.
Combine tomatoes with onion, garlic, lime juice, cilantro, jalapeno, salt, pepper and vinegar.
Cover and refrigerate for at least two hours to blend flavors. Store covered and refrigerated for two weeks.
