
I grew up in Iowa and am a huge fan of pork. This recipe showcases pork in a tender, juicy, flavorful Indian style that is super easy to make.
It's fantastic served with flatbreads, naan or your favorite rice.

1 Tablespoon butter
1 onion, sliced
2 pound pork tenderloin, sliced into medallions
2 Tablespoons coriander seed, crushed
1 teaspoon fresh black pepper
1 Tablespoon paprika
4 Tablespoons oil
salt to taste, start with 3/4 teaspoon and add more if necessary
1 large tomato, sliced into 8 wedges
fresh cilantro, chopped, for garnish
lemon wedges, for garnish
sliced cucumber and red pepper, on the side
Indian flatbread, a.k.a Naan, if desired

In a skillet, melt butter and saute onion over medium low heat until until soft.
Pierce pork liberally with a fork.
Mix together coriander, pepper, paprika, oil and salt. Rub all over meat pieces. Cover meat with sauteed onion. Wrap tightly and refrigerate overnight, or for several hours.
Heat oil in a large, deep skillet. Add the pork/onion mixture to hot skillet and fry quickly for 2 minutes each side.
Lower heat, add tomato wedges and saute for 5 minutes, turning meat every minute or so.
Sprinkle with cilantro and lemon.
Garnish with cool cucumber slices and red pepper strips.
Serve with flatbread, such as naan-- if desired.
