Chicken Davenport

Forgive me for being absent all weekend...I had a house full of out-of-town guests. It was hectic, but wonderful.
Here's a recipe for something easy and delicious that I always like to make for my company. It goes together pretty fast, and everyone seems to enjoy it. The bacon wrapping keeps the chicken extra moist and imparts a wonderful flavor. You can substitute green onions for the chives if you have those on hand. I think you'll agree Chicken Davenport is a keeper!




6 boned, skinned chicken breasts
8 oz. cream cheese, softened to room temp.
12 strips of bacon--thick-sliced works best
1 teaspoon fresh chives diced
a dozen toothpicks


BLEND cream cheese and chives.

FLATTEN chicken breasts between foil, or wax paper

PREHEAT oven to 375 degrees.

PLACE about 1 tablespoon cream cheese mixture on each flattened chicken breast and roll up tightly.

WRAP 2 slices of bacon around each breast and secure with toothpicks.

BAKE in a large shallow pan for 40 minutes or until bacon is crisp.
