Fish In A Flash

Fish is so good for you and almost everyone enjoys it. This easy recipe combines Dijon-style mustard with Parmesan cheese in a mouthwatering coating for your favorite whitefish. It's ready for the oven in less than ten minutes and bakes in about 15. That's why I call it fish in a flash! See for yourself...



3 Tablespoons mayonnaise
3 Tablespoons grated Parmesan cheese, divided
1 Tablespoon lemon juice
2 teaspoons Dijon mustard
1 teaspoon horseradish
1 lb. whitefish fillets (tilapia is great in this)
1/4 cup dry bread crumbs
2 Tablespoons butter, melted

In a small bowl, combine the mayonnaise, 1 tablespoon Parmesan cheese, lemon juice, mustard and horseradish. Place fillets on a baking sheet coated with cooking spray. Spread mayonnaise mixture evenly over fillets.
In a small bowl, combine the bread crumbs, butter and remaining Parmesan cheese; sprinkle over fillets.
Bake at 425° for about 14 or 15 minutes or until fish flakes easily with a fork.
Serves 4.
