Crybabies--The Cookie

This recipe is my husband's favorite cookie from childhood. They're called CRYBABIES, and are essentially a molasses cookie with raisins. In this recipe, however, raisins are boiled first--just until they puff--making them so light and fluffy. Ooooh, they're really good. My sister in law frosts hers with a light glaze of vanilla icing, they're good that way too. Take a look~

1 cup sugar
1 cup shortening
2 eggs
1 cup molasses
2 tsp. baking soda
1 cup hot coffee
5 cups flour
pinch of salt
2 tsp. ginger
2 tsp. cinnamon
2 cups raisins, boiled for about 10 minutes until puffy

Cream sugar and shortening. Add eggs, beat well. Add molasses. Dissolve soda in hot coffee, add to creamed mixture. Add all remaining dry ingredients and raisins. Drop by spoonfuls on greased cookie sheet. Bake 10 to 15 minutes at 350 degrees. (check for doneness at 10 minutes)
